Hot and Spicy Meat Balls — Guaranteed to Eliminate Stress!

For Sauce- Mix in a bowl

  • ¾ cup ketchup
  • ½ cup water
  • ¼ cup cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons minced onion
  • 2 tablespoons minced garlic
  • 2 tablespoons dried chives
  • 2 tablespoon horseradish
  • 2 teaspoons Worcestershire sauce
  • 1 ½ teaspoons salt
  • 1 teaspoon dry mustard
  • Sprinkle of cayenne pepper
  • 6 drops Tabasco

Will cover approximately 3 dozen average meat balls. Sauté in sauce for one hour or more for good penetration. Add water if mixture gets to thick For additional meat balls double recipe Provide fancy cocktail picks Always a hit at parties!

Kicken Chicken Buffalo Dip — Guaranteed to Eliminate Stress!

  • 2 pkgs, (8oz.) Cream Cheese softened
  • ½ Louisiana Hot Sauce
  • 1 c. Shredded Cheddar Cheese
  • 2 Tab. either Ranch Dressing or Blue Cheese
  • 2 cans (9.75 oz. each) Chunk chicken, drained and shredded.

Directions:

Heat oven to 400 degrees. Stir cream cheese in 9in. deep dish until cheese is smooth. Stir in dressing, pepper sauce and half of the cheddar. Mix well. Sprinkle remaining cheese on top. Bake about 25 min.  Serve with your favorite veggies, tortilla scoops or cracker.

Italian Peasant Soup — Guaranteed to Eliminate Stress!

  • 11 Servings
  • Prep/Total Time: 25 min.

Ingredients

  • 1 pound Italian sausage links, casings removed and cut into 1-inch slices
  • 2 medium onions, chopped
  • 6 garlic cloves, chopped
  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cans (15 ounces each) cannellini or white kidney beans, rinsed and drained
  • 2 cans (14-1/2 ounces each) chicken broth
  • 2 cans (14-1/2 ounces each) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 6 cups fresh spinach leaves, chopped
  • Shredded Parmesan cheese, optional

Directions

  • In a Dutch oven, cook sausage and onions over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Add chicken; cook and stir until no longer pink.
  • Stir in the beans, broth, tomatoes, basil and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add the spinach and heat just until wilted. Serve with cheese if desired. Yield: 11 servings (2-3/4 quarts).

Nutrition Facts: 1 serving (1 cup) equals 169 calories, 7 g fat (2 g saturated fat), 39 mg cholesterol, 471 mg sodium, 11 g carbohydrate, 3 g fiber, 16 g protein.

Catch of the Bay Shrimp Dip — Guaranteed to Eliminate Stress!

  • ½ Pound Cooked, Peeled, Chopped Shrimp
  • 1 – 8 oz. Package Cream Cheese, Softened
  • 2 Tablespoons Chopped Sweet Onion
  • 1 Tablespoon Horseradish Sauce
  • 1 Teaspoon Worcestershire Sauce
  • 1 Teaspoon Lemon Juice
  • 2 Teaspoons Melted Butter
  • 2 Tablespoons Ketchup
  • 1 Tablespoon Chives
  • 1 Clove Garlic Chopped
  • 1/3 Cup Mayonnaise

Always drain shrimp, frozen shrimp is full of water. Pre-make when possible, always better the following day. Serve chilled with plain crackers Great for low carbohydrate diet.
